Tuck into some Tuscan with the Caldesis - Duck with Cherries in Gabbiano Chianti

The husband and wife duo Giancarlo and Katie Caldesi cook up traditional Italian food at the Tuscan Caldesi and Caffe Caldesi in London and Caldesi in Campagna in Bray, Berkshire.

English born Katie Caldesi is the principal of their cookery school, La Cucina Caldesi, in London. She is a keen cook having learnt her love of food from her mother's kitchen. Giancarlo remains very Italian, in spite of having spent the last 30 years living and working in the UK. Both give demonstrations at their cookery school.

The Caldesis starred in television show, Return to Tuscany, shown on BBC Two and UKTV Food, and have published two books, ‘Return to Tuscany’ and ‘Italian Mama’s Kitchen’ and Katie is currently writing their third.

In this video they show how to cook Duck with Cherries in Gabbiano Chianti, a rustic Tuscan recipes.

I live in Tennessee, in the U.S.,and tho we are often called "hillbillies," we are actually quite civilized! Us citified Tennesseans, that is! My youngest son, Sam, is a hunter and and goes duck hunting a couple of times a year. It's a big deal here to get access to an actual duck "Blind" to hunt from. They actually hold lotteries for them and $$$ helps! Luckily, Sam gets his limit each trip. I have been looking for a more original and "Dressed up" recipe to prepare his bounty. This looks delicious and I'm going to give it a go the next time he brings one home to his Mommy! You guys are very enjoyable and I appreciate you taking the time to video your techniques for all of us!!
